
Vegetable Juice:
One of the best things you can do for yourself is to make your own vegetable juice. Most of the juices in the store contain a fruit base such as apples and have gone through some sort of processing. Other juice shops will make juice, but add other ingredients for flavor. For the real raw deal you can make your own with fresh vegetables. There are many books available to the first time "juicer" such as Juicing for Life that will help you to decide what type of juice fits your personal needs. Basically to get started, you need a juice processor, I like the Juiceman Jr. since it is rather easy to clean and you do get some pulp and fiber. Next, you throughly clean all the produce and cut into large pieces that will fit through the hopper. My favorite blend is spinach, beet, carrot, cucumber, and celery juice. Now, some people will say that they would rather eat the entire vegetable to get the benefits of the fiber, but I like the fact that you can consume the recommended amount of vegetables in one serving so you benefit from the nutritional value of the food. It is important that all vegetable juice should be consumed right away and not stored in the refrigerator. One of the obstacles to homemade juice is having a supply of vegetables, so this year my husband and son put in a retaining wall for a raised garden. We just ordered the soil over the last week of December, a compost 4:1 mix garden soil and we'll be ready to go when the time is right. I'll have figure out when that is.
